A taste of my childhood – grandma’s green bean soup

Hi everyone!
Today I would like to introduce you to a childhood recipe. Green beans are in season right now and they are very nutritious, rich in proteins, fiber and all kinds of minerals - and they are green! Let’s face it, lately we are all into “something green”. Also this recipe is very low in calories and not very expensive. So, you have a tasty and nutritious low budget meal that is even regional and seasonal. Enjoy!

500g fresh green beans
1 tbsp savory
500g potatoes
1 large onion
2 Mettwurst sausages or similar red sausages
2 liters vegetable stock
Salt and pepper to taste

Peel the potatoes and cook until ready and set them aside. In the meantime chop beans and bring them to a boil until you can see foam. Remove the water and let the beans boil of 15 – 20 minutes in vegetable stock. Divide the onion into eights and boil together with beans. After about 15 minutes mash the potatoes (but still leave a few pieces in it) and add them to the soup together with the sausages. This will give the soup a nice texture. Remove the sausages after 5 minutes, slice them and put them back into the soup. Add savory and serve.

I hope you will like my grandmother’s recipe. It is traditionally German and still low in calories and very delicious. Usually I don’t really like traditional German food but this one is an exception.

All the best!

Stefanie
